3 very ripe bananas (the spotty brown ones) half a cup of melted butter three quarters of a cup of sugar 1 egg 1 small spoon of vanilla 1 small spoon of baking soda a pinch of salt 1 and a half cups of flour a handful of walnuts if you like (i do) |

1. heat your oven to 350 of your degrees. 2. peel the bananas and place them in a bowl. mash them with a fork until they are mostly smooth. some lumps are good. 3. add the melted butter and stir. 4. add the sugar, the egg, and the vanilla. stir again. 5. sprinkle the baking soda and salt across the top. stir them in. 6. add the flour last. stir gently. do not over-mix or the bread will be tough. i learned this from a kind earth-person on a cooking forum. 7. fold in the walnuts if you are using them. 8. pour the batter into a buttered loaf pan. 9. bake for about an hour. test with a thin stick ~ if it comes out clean, the loaf is done. 10. let it cool a little before you slice it. or do not. i never can wait. |
